Cornbread
| 2 cups self-rising cornmeal |
|
1 egg |
| 2 cups buttermilk |
|
1/4 cup shortening |
Melt shortening in 10-1/4 skillet while preheating oven. Mix milk and egg with self rising stone ground corn meal. Pour melted shortening into batter and then batter into hot greased LODGE cast iron skillet and bake at 400º until browned.
Southern Fried Chicken
| 1 chicken |

1 cup flour |
| 1 egg |
|
1/2 cup milk |
| 2 tsp. garlic powder |
|
1 tsp. paprika |
| 1 tsp. black pepper |
|
1 tsp salt |
Perfect southern fried chicken : Prepare one frying chicken. Prepare flour mixture by mixing dry ingredients. Prepare milk and egg mixture, and add 1 tablespoon of flour to the mixture. Dip chicken in egg mixture, again in flour mixture, repeat, and shake well. Fry in hot grease, with chicken pieces half covered in Crisco, and well spaced, until brown, then turn. Cover with lid for 7-8 minutes on low heat, and then brown on higher heat. Drain on paper towels. For just the right utensil click here: 5 qt.chicken fryer.
Fried Green Tomatoes
| 4 green tomatoes, sliced |

Salt, pepper, or cayenne |
| 1 cup white cornmeal |
|
1 cup flour |
Salt and pepper 1/4" tomato slices. Coat both sides of your tomato in flour/cornmeal mixture and saute over medium heat in a cast iron skillet until brown.
Red Eye Gravy
Add water (or black coffee) to fried ham drippings in a hot pan. Let sizzle and stir. Serve with country cured fried ham slices and biscuits.
Hushpuppies
| 1 cup self-rising flour |

1 egg beaten |
| 1 cup self-rising cornmeal |
|
1/2 cup chopped green onion |
| 1 cup buttermilk |
|
1 teaspoon sugar |
| 1/2 teaspoon salt (optional) |
|
|
Combine dry ingredients. Add egg, onions, and 1/2 cup buttermilk to flour/cornmeal mixture. Gradually add remainig buttermilk until batter is well mixed, but not runny. Drop spoonfuls of batter into a Lodge fry kettle and fry until golden brown. Drain on paper towels.
APPLE-OAT CRISP
Serve with ice cream or whipped topping, for a special dessert.
Ingredients:
5 medium tart apples, peeled, cored, and sliced
1/3 cup firmly packed light brown sugar
1/3 cup granulated sugar
1/2 cup all-purpose flour
3/4 cup quick cooking oats
1/2 cup melted butter
1/3 cup water
whipped cream or vanilla ice cream
Preparation:
Arrange sliced apples in a buttered 8-inch square baking dish. In a bowl, combine the sugars, flour, and oats; stir in melted butter. Spread mixture over the apples. Pour water evenly over top. Bake in a 375° oven for 30 minutes, until apples are tender and top is nicely browned. Serve warm or cooled with ice cream or whipped cream.
Serves 4.
BREAKFAST CASSEROLE
Ingredients:
6 slices of bread
1 lb. sausage (browned and drained)
8 oz. cheddar cheese (grated)
2 cups milk
6 eggs
1 teaspoon dry mustard
1 teaspoon salt
Directions:
Butter bottom of cast iron casserole dish. Remove crust from bread, butter both sides. Place in bottom of casserole dish. Top with browned sausage, then grated cheese. Stir eggs, milk, salt and mustard until well blended. Pour over sausage and cheese. Bake uncovered at 350 degrees F for 45 minutes.
Serves 8-10
MOUNTAIN MAN BREAKFAST
Ingredients:
2 pounds sausage
2 pounds frozen hash brown potatoes
8 eggs, beaten with 1/4 cup water
2 cups grated cheese
Directions:
Fry and crumble the sausage in the Dutch oven.Remove cooked sausage and drain on paper towels. Using the sausage drippings in the pan, brown potatoes and spread them evenly in bottom of Dutch oven. Place cooked sausage over potatoes. Pour eggs over sausage layer. Sprinkle top with cheese. Cook with 8 coals underneath Dutch oven and 16 on top for 20-25 minutes, until eggs are cooked.
Serves 8
Spanish Rice w/Beef Recipe
Spanish rice recipe is made with ground beef, tomatoes, and seasonings.
Ingredients:
1 pound lean ground beef
1 tablespoon butter
1/3 cup chopped onion
1/4 cup chopped green bell pepper
2 teaspoons salt
1 or 2 teaspoons brown sugar, optional
1 teaspoon chili powder
1/4 teaspoon pepper
1 teaspoon Worcestershire sauce
2 cans (14.5 ounces each) diced tomatoes
1/4 cup ketchup
1/2 cup long-grain rice
PREPARATION:
In a heavy skillet brown ground beef in butter. Add onion, green bell pepper, salt, brown sugar, chili powder, pepper, and Worcestershire sauce. Cook until onion is tender. Add tomatoes and ketchup; simmer 15 minutes.
Add rice. Cover and simmer 25 minutes, or until rice is tender, stirring occasionally. Add a little water or tomato juice if necessary.
Serves 6.
HAM AND CORN CHOWDER
3 cups diced,cooked ham
1 cup chopped celery
1/2 cup chopped onion
1/2 cup melted butter
3 (10-ounce) packages cream-style corn,thawed
1 cup milk
1/2 teaspoon onion salt
1/2 teaspoon celery salt
1/2 teaspoon pepper:
Saute ham,celery and onion in butter,in a heavy pot or dutch oven.Stir in remaining ingredients and bring to boil.Reduce heat and simmer about 20 minutes,stirring occasionally.
THE FAMILY MEATLOAF
1 to 1-1/2 pounds ground beef
1 egg
1/2 cup oatmeal
1/2 cup chopped onion
1/4 cup chopped bell pepper
1 1/2 teaspoon of salt
1/4 teaspoon pepper
3/4 cup ketchup,plus more for topping
Blend all ingredients together in a large bowl.Shape into loaf and place in an iron skillet.Cook on 400 degrees for 30 mins.Pour off any excess grease.Top meatloaf with additional ketchup and spread to cover the top.Return to oven for 10 minutes.
